Food Adventure # 6 - Chilli Chiken Pasta Salad With Peanut And Spicy Tamarind Dressing

Ingredients:

  • 200gm Chilli Chicken
  • 150gm Penne Pasta
  • 100gm Red Bell Pepper, diced
  • 100gm Yellow Bell Pepper, diced
  • 100gm Green Capsicum, diced
  • 80gm Peanut, roasted
  • 100gm Onion, diced
  • 100ml Spicy Tamarind Dressing

CHILLI CHICKEN

  • 200gm Chicken Thigh, boneless 
  • 5gm Salt
  • 5ml Soy Sauce
  • 2ml Ginger Juice
  • 2gm Garlic, chopped

SPICY TAMARIND DRESSING

  • 80gm Tamarind Paste
  • 15gm Red Chilli Powder
  • 5gm Garlic Paste
  • 3gm Cumin Powder
  • 2gm Sugar
  • 3gm Salt

Directions:

  • Take the chicken thigh. Cut into small pieces. Add salt, Soy Sauce, ginger juice, chopped garlic. Cook in the oven for 8–10 minutes at 180 degrees Celsius.
  • Roast the bell peppers and onions in the oven for 10 minutes at 180 degrees Celsius.
  • In a pan, add tamarind paste, garlic paste, red chilli powder, cumin powder, sugar, water and salt. Cook for 4-5 minutes till it becomes thick in  consistency.
  • Boil the pasta and refresh it in the running water.
  • Mix all the above ingredients well.
  • Arrange the salad in a bowl.
  • Garnish with the roasted peanut.
