Food Adventure # 25 - Mix Vegetable Baked Ratatouille Khurchan

Ingredients:

  • 30ml Olive Oil
  • 100gm Zucchini, diced
  • 100gm Eggplant, smoked &puréed
  • 80gm Cherry Tomatoes
  • 100gm Red/Yellow Bell Peppers, diced
  • 15gm Garlic Cloves, chopped
  • 10gm Ginger, chopped
  • 30gm Onion, chopped
  • 5gm Green Chillies, chopped
  • 5gm Black Pepper, crushed
  • 200gm Makhni Gravy (readymade)
  • 10gm Red Chilli Powder
  • 10gm Pao Bhaji Masala
  • 5gm Garam Masala
  • 10gm Coriander Leaves, chopped
  • 5ml Lemon Juice
  • 5gm Cumin Seeds, whole
  • 2 no. Red Chillies, whole       
  • 10gm Oregano 
  • 15gm Parmesan Cheese, grated
  • 20gm Processed Cheese, sliced
  • To taste Salt

Directions:

  • Take oil in a non-stick pan. Temper whole cumin seeds and whole red chillies, sauté ginger, garlic, onion and green chillies. 
  • Add Makhni Gravy, red chilli powder, and Pao Bhaji Masala. 
  • Cook the masala for 5 minutes. Add smoked eggplant purée and rest of the vegetables. 
  • Toss the vegetables.Adjust seasoning with salt and pepper.Finish with chopped coriander, garam masala and lemon juice. 
  • Dish out ratatouille. Add grated parmesan cheeses on top. 
  • Bake in OTG for 15 minutes at 200 degrees Celsius. Put processed cheese slices on top of hot ratatouille.
  • Serve hot.
