Food Adventure # 18 - Mediterranean Vegetables with Brown Rice

- 80 Zucchini Sliced
- 30 Onion Diced
- 20 Carrots Sliced
- 30 Tomatoes Cut Into 4
- 20 Garlic Clove Diced
- 12 Rosemary
- 0.2 Saffron
- 1 Vegetable Stock Cube(Knorr)
- 200 Water
- 5 Star Anis
- 125 Brown Rice
- 3 Salt
- 2 Black Pepper Crushed
- 20 Olive Oil
- Wash and soak the rice in a bowl for 20 minutes
- Marinate the Zucchini Sliced,Onion Diced, Quatered Tomato, Sliced Carrots with Diced Garlic, Salt, Black Pepper Crushed,Rosemary and Olive Oil for 10 minutes.
- Heat the Olive oil in a Hamilton rice cooker. Put the marinated vegetables and cook for 5 minute till it gets golden color.
- Add water to it . Bring it to boil add vegetable broth cube, saffron and salt.
- Add soaked rice to it and cook it for 40 minutes.
- Serve hot.
